  • 2 cups oats, blended
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1/4 cup almond milk (or plant milk of choice)
  • 3/4 cup gluten-free flour
  • 100g vegan chocolate, roughly chopped
  • 1 teaspoon flaked salt

  1. Step 1

    Preheat the oven to 180℃.

  2. Step 2

    In a blender, add the oats and blitz until they reach the consistency of flour. Add them in to a large bowl with the gluten-free flour, baking soda, baking powder and mix well.

    Add the melted coconut oil, maple syrup, and almond milk and mix well, then fold through the chopped chocolate pieces.

  4. Step 4

    Line a baking tray with baking paper and using an ice cream scoop, measure out 12 cookies and space them about 3 inches apart.

  5. Step 5

    Bake cookies for 12–14 minutes. The cookies will be slightly soft but will firm once cooled. Cool them on the baking tray for 10 minutes before transferring to a cooling rack.

  6. Step 6

    Top the cookies with flaked salt and enjoy!
