Recipe Vegan Butter ‘Chicken’
Show moreButter Chicken is, for many, the holy grail of Indian cuisine. Our plant-based take on the popular classic uses banana blossom to recreate that familiar meaty texture, and it is melt-in-your-mouth delicious, nestled into this richly spiced curry.
You will need
Serves 4
'Chicken'
- 2 x 400g tins banana blossom, drained
- ½ cup (90g) dairy-free unsweetened yoghurt
- 2 tablespoons corn flour
- 1 teaspoon garam masala
Curry
- 2 tablespoons vegan butter
- 1 onion, finely diced
- 3 cloves garlic, crushed
- 1 tablespoon grated ginger
- 2 teaspoons curry powder
- 1 teaspoon garam masala
- 400g coconut milk
- 100g tomato paste
- Salt and pepper, to taste

Step 1
Preheat your oven to 200°C (conventional) or 180°C (fan-forced). Line a baking tray with greaseproof paper.

To prepare the banana blossom, cut each blossom into long spears (approximately 4). Add to a large bowl with the corn flour, yoghurt and garam masala. Toss until combined.

Spread the banana blossom on your baking tray. Bake for around 15-20 minutes or until fragrant. Set aside.

In a large fry pan over medium heat, melt the butter. Fry the onion for 5 minutes or until translucent. Add the garlic, ginger and spices, then fry for a further 2 minutes, or until fragrant.

Add the coconut milk and tomato paste. Stir to combine.

Transfer the mixture to a blender and blend until smooth. Return the sauce to the fry pan.

Add the banana blossom to the sauce. Gently stir and cook for 10-20 minutes. The curry is ready when the banana blossom has softened and the sauce has thickened. For a runnier sauce, add some water to the pan, or for a thicker sauce, cook the mixture for longer. Season the dish to taste.

Serve with basmati rice, naan and fresh coriander, or as desired.
Variation
If you want to make this plant-based butter chicken even ‘meatier’, try swapping out the banana blossom for one of these store-bought vegan chicken products!
