First rule of tofu: It will taste only as delicious as your seasoning is. And the more surface area your tofu has, the more flavour it can absorb and hold. So, imagine the flavour potential of your dinner when you shred your tofu to a gazillion pieces and then season the heck out of it!    

You will need

Serves 4

  • 2 tablespoons olive oil
  • 1 red onion, sliced
  • 450g firm or extra-firm tofu
  • ¼ cup tomato paste
  • 2-3 tablespoons soy sauce, to taste
  • 2 teaspoons smoked paprika
  • 2 teaspoons oregano
  • 1 teaspoon chilli flakes, or to taste
  • Salt and pepper, to taste

To serve

  • Soft or hard taco shells
  • Smashed avocado
  • Lime juice
  • Coriander
  • Lettuce
  • Pickled onions

  1. Step 1

    Using a clean tea towel, gently press the tofu to remove any excess water.

  2. Step 2

    Use the large side of a box grater to shred the tofu. Alternatively, you can cut the tofu into thin shreds or small chunks.

  3. Step 3

    In a large frying pan, heat the olive oil over medium heat. Cook the onion until softened. Add the tofu and fry until slightly golden.

  4. Step 4

    Add the tomato paste, soy sauce and herbs. Fry until the mixture is fragrant and deep in colour. If anything sticks to the bottom of the pan, deglaze by adding a dash of water. Season with salt and pepper, to taste.

  5. Step 5

    Serve in warm tacos with your choice of fillings.

Hot tip!

If you prefer your tacos with a meatier texture, freeze your tofu before shredding.
