Seriously, what can’t mushrooms do? Thanks to their satisfying chew, they can masquerade around the kitchen as calamari, scallops, jerky, shawarma … even steak! No surprise with a few key seasonings, they make an excellent pepperoni, too.
You will need
Makes 10
- 10 fresh shiitake mushrooms
- Cooking spray
'Pepperoni' Marinade
- 3 tablespoons vegan-friendly red wine
- 1 tablespoon soy sauce (or tamari)
- 1/4 teaspoon liquid smoke
Spice rub
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon star anise
- Small pinch chilli flakes
- 1/4 teaspoon smoked paprika
- 3/4 teaspoon soft brown sugar

Directions

Step 1
Combine the marinade ingredients in a large bowl and add the whole mushrooms. Soak for at least an hour. Remove from the marinade, then shake off the excess liquid.

Step 2
Place a large frying pan over medium heat. Add the shiitake mushrooms and use a smaller frying pan to compress them into flat discs as they cook for 3 minutes. Flip the mushroom slices and cook for another 3 minutes, pressing down occasionally. Set aside to cool.

Step 3
Crush the spice rub ingredients using a mortar and pestle. Then rub over the mushroom slices.

Step 4
Either coat in cooking oil spray and bake at 180°C for 10-15 minutes or use on pizza and in other recipes, where they will be cooked further and paired with something nice and fatty.
