In many parts of the world the entire banana plant is used for food, and not just because it reduces waste, but the peel is also loaded with antioxidants and fibre! And here you thought banana peels were strictly for the compost bin and Mario Kart wrecks 😉
You will need
Serves 4
- 190g banana peels from barely ripe, large bananas
- 190g king oyster mushrooms
- 1 onion, sliced
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 2 teaspoons minced garlic
- 90ml BBQ sauce

Directions
Step 1
Peel the bananas and reserve the banana flesh for another recipe (or a smoothie, or snack!).
Slice off the banana skin ends, then use a spoon to scrape out the remaining flesh. Thoroughly wash the banana skins and pat dry with paper towel.
Step 2
Place the skins on a chopping board and use a fork to shred the skin. Place in bowl, drizzle with the sesame oil and massage in the garlic.
Step 3
Slice off the king oyster mushrooms caps and shred the stalks. Save the caps for another recipe.
Step 4
Heat the vegetable oil in a wok over medium heat. Add the onion and shredded mushroom and toss for 5 minutes to brown. Mix through the banana peel mixture and cook for 6 – 8 minutes.
Pour over the BBQ sauce and stir for 2 more minutes.
Step 5
Remove from the heat and whack into a mean burger, or as desired.
Hot tip!
To serve in a burger, I recommend adding a hearty coleslaw mix, pickles and hot sauce.Â
