It might sound wild, but rice paper is actually an uncanny surrogate for crispy, American-style bacon. And as you can imagine, the marinade is everything here — packing in all the savoury, smokey flavours you’d expect of a proper sandwich topper.

  • Rice paper sheets

Marinade

  • 3 tablespoons nutritional yeast
  • 2 tablespoons dark or mushroom soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • A few drops of vegan-friendly red food colouring, for optional drama

Step 1

Combine the marinade ingredients in a bowl and set aside.

Step 2

Wet a sheet of rice paper under running water, then wipe away the excess water with your hand.

Spread some marinade over a plate, lay the dampened rice paper on top and coat the exposed side with more marinade.

Step 3

Cut into 4-5 strips with scissors and deep or pan-fry the pieces for 1-2 minutes per side until crisp. Drain on a paper towel, and enjoy!

Hot tip!

Want a chewier bacon? Layer 2-3 sheets of rice paper wet together before marinating and frying.
