Thick, crusty, and golden on the outside—soft, fluffy, and warm on the inside—this no-fuss Irish soda bread comes together in minutes and bakes into the perfect rustic loaf. Slather on some vegan butter while it’s fresh from the oven and indulge in a melty, comforting carb-filled moment.
You will need

- 500g whole wheat flour, plus extra for hands
- 1 1/2 tsp bicarb soda
- 1 tbsp flax seeds
- 1 tbsp hemp seeds (optional)
- 2 tsp salt
- 500g oat milk, plus extra if needed
- 5ml apple cider vinegar

Directions

Step 1
Preheat the oven to 180°C.

Mix the dry ingredients together in a large bowl.

Make a well in the centre of the flour and pour in the wet ingredients. Gently mix together, similar to pasta dough, but avoid overworking it. Minimal handling ensures the bread remains tender with a beautifully crisp crust.

Once everything is combined and wet, empty onto a work surface sprinkled with flour.

Gently shape the dough by pushing gently on the sides and turning the dough slightly. Continue doing this until the dough is shaped like a large puck.

Place the dough onto a baking tray with baking paper on it. Using a sharp serrated knife, score two intersecting lines right across the top (a big X), approx 1 cm deep.

Put the dough in the oven and cook for 35-40 minutes or until the bottom, when tapped, sounds hollow.

Give it a moment to cool, then slice it up, spread with vegan butter, and enjoy!
