Tahini is one of the most versatile ingredients that you may not yet have in your pantry. While perhaps best known for its supporting role in hummus, its nutty sesame flavour lends itself beautifully to a sweet dressing for this summer salad.
You will need
Serves 2
For the dressing
- 3 tablespoons tahini
- 1 lemon, juiced
- 1 tablespoon icing sugar
- 1 vanilla bean pod
Fruit salad
- 1/2 punnet strawberries
- 1/2 punnet blueberries
- 1/2 punnet raspberries*
- 1 valencia orange, cut into bite-size pieces
For garnish
- Mint leaves

Directions

Step 1
Add tahini to a bowl with the juice of one lemon. Whisk together until it comes back together, then add the icing sugar and whisk into a paste. Add some water if needed to turn it into a pouring consistency.

Step 2
Cut the vanilla bean pod in half and scrape out the seeds. Add them to the tahini dressing and stir through.

Add fruit into a bowl and toss to mix them up.

Step 4
Pour 3/4 of the tahini dressing into a serving bowl, add the fruit on top and drizzle the remaining dressing on top. Add sprigs of mint for garnish.
Variation
*Mix up the berry selection as per your preferences — blackberries and cherries work beautifully as well!
