Who needs eggs when you have aquafaba? Try these super simple recipes for aquafaba meringues, mayo, chocolate mousse, tiramisu & more.

What is aquafaba?

Aquafaba is the silky smooth, neutral-tasting ‘water’ hiding in your cans of chickpeas and beans – and thanks to its foaming, binding, and thickening properties, it’s liquid gold when it comes to replacing eggs in vegan baking and cooking.

1. Fluffy Vegan Chocolate Mousse

The fact that aquafaba gets so frothy and voluminous when you whip it up makes it the perfect base for light and bubbly chocolate mousse. Every decadent, delicate spoonful practically melts in your mouth! 

2. Easy Vegan Mayo

When it comes to making thick and creamy egg-free mayonnaise at home, aquafaba is a must. This recipe absolutely nails the brief texture-wise, and uses mustard, salt, and vinegar to create that classically tangy mayo flavour.

If you’re after a beautiful vegan dessert that’s guaranteed to impress, you just found it. This deceptively easy recipe uses aquafaba to its full effect in the crispy meringue topping, with a zingy layer of lemon curd hiding beneath.

4. Aquafaba Grapefruit Gin Sour Cocktail

Many bars these days are able to make egg white cocktails vegan by using aquafaba to make them foamy instead – and here’s how to do just that at home. Spoiler alert: It involves a vigorous shake… and that’s about it. Easy as!

5. Mini Pavlova Cups

Pavlova and meringues are some of the most popular treats people make with aquafaba, and for good reason: It works beautifully. These delightfully airy, crunchy-on-the-outside mini pavlova cups are the ultimate proof. 

6. Banana Muffins

Multi-talented aquafaba can also be used as a binding agent in baked goods like muffins! It makes these banana muffins super light and fluffy, which makes the contrasting crunch of walnut crumble on top all the more satisfying.

7. Aquafaba Ice Cream

Is there anything aquafaba can’t do? Apparently not – this overachieving ingredient excels in egg- and dairy-free ice cream recipes, too. You don’t even need an ice cream maker for this one, just your regular hand or stand mixer.

8. Classic Tiramisu

This vegan tiramisu recipe is utterly divine, featuring espresso-soaked biscuits, aquafaba-fluffed custard, melted dark chocolate, and bright pops of fresh berries. Yet another addictive example of what aquafaba can do!

9. Mango Passion Fruit Eton Mess

If you’ve never had Eton mess before, it’s definitely time to change that. This classic British dessert is made by crunching up (in this case, aquafaba-based) meringues and layering them with mixed fruit and yoghurt or cream.

10. Okonomiyaki

Aquafaba is often used to great effect to make pancakes fluffier, and this works just as well for savoury pancakes as it does for sweet. This okonomiyaki recipe is crispy, indulgent, and 100% egg-free. 

11. Southern-fried Jackfruit Drumsticks

Another way aquafaba can stand in for eggs is by helping to stick ingredients together – which includes battering and crumbing things like these KFC-style jackfruit drumsticks. The result is a ridiculously crispy outer layer, infused with a not-so-secret blend of herbs and spices.

12. Fluffy Aquafaba Whipped Cream

Most vegan creams are made using a rich, coconut-milk base, but aquafaba provides a great alternative if you prefer a lighter, still sweet, but more neutral flavour. Add this fluffy whipped cream to just about any of the desserts on this list!

13. Best Vegan Chocolate Chip Cookies

These chewy, melty choc chip cookies are made using aquafaba instead of eggs – and sure, cookies are always delicious, but these cookies are particularly outstanding. We’re convinced no one would ever know they were vegan.

14. Vegan Olive Oil Brioche

You can actually buy vegan brioche buns in stores these days, but making your own from scratch gives you bragging rights, and is much easier than you’d think. Aquafaba shines in this recipe, volumising the dough to form a super soft, golden bread. 

15. Vegan Vanilla Cake
