Show moreIf you haven’t tried buffalo cauliflower ‘wings’ yet, this may be life-changing for you. Because buffalo cauliflower on pizza — with a homemade ranch sauce — is almost too good to be true.
You will need
Serves 2
- 1 plant-based pizza crust (gluten-free if required)
- 1 head of cauliflower, chopped into small florets
- 2 tablespoons coconut oil
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons vegan butter
- 1/2 cup + 2 tablespoons buffalo sauce
- 3 cups vegan mozzarella
- 1/2 avocado, sliced
Vegan Ranch
- 3/4 cup plain vegan yogurt
- 3 tablespoons macadamia milk
- 1 tablespoon fresh parsley
- 1 tablespoon fresh dill
- 1/2 teaspoon sea salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon agave syrup
- 1/4 teaspoon cracked pepper
Directions
-
Step 1
Preheat oven to 200°C or 180°C fan forced.
-
Step 2
Prepare pizza crust according to package directions. Make sure to bake the crust before adding toppings.
-
Step 3
Toss cauliflower florets in coconut oil, salt and cornstarch. Spread evenly on a baking sheet and roast for 20-25 minutes, until tender and golden brown.
-
Step 4
In a small saucepan, heat buffalo sauce and vegan butter over medium-low and whisk until well combined. Remove from heat and reserve about 1/4 cup in a separate bowl. Pour the rest over the baked cauliflower and toss to combine.
-
Step 5
Spread remaining 1/4 cup of buffalo sauce over pizza crust in a thin layer. Top with vegan cheese and buffalo cauliflower.
-
Step 6
Bake for about 10 minutes, or until cheese is melted.
-
Step 7
Meanwhile, whisk together all ingredients for vegan ranch.
-
Step 8
Remove pizza from oven and let cool slightly. Top with avocado slices, microgreens and a drizzle — or pour — of vegan ranch. Slice and enjoy!
