Dare we say, healthy chips? Okay, it’s not a super salad, but these baked avocado beauties definitely tick more nutritional boxes than a plate of chips and they are a whole lot more decadent!

You will need

Serves 4

  • 2 avocados, halved, and each half cut into 6 slices
  • 1/3 cup flour
  • 1/2 cup almond milk
  • 1 cup panko breadcrumbs
  • Pinch of salt
  • Pinch of chilli powder

Aioli

  • 1 cup cashews
  • 3 cloves garlic
  • 1 1/2 tablespoons lemon juice
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 cup water

  1. Step 1

    Preheat oven to 200°C.

  2. Step 2

    Spread flour and breadcrumbs over two separate plates. Stir salt and chilli powder through the breadcrumbs. Pour the milk into a bowl.

  3. Step 3

    Coat each avocado slice in flour, then dip in milk and finally, coat in breadcrumbs.

  4. Step 4

    Place them on a greased tray and bake for 20 minutes or until golden brown.

  5. Step 5

    Meanwhile, to make aioli, place all ingredients in a food processor and process until smooth.

  6. Step 6

    Transfer avocado fries to a platter and serve with aioli on the side.

Hot tip!

For a smoother aioli sauce, pre-soak the cashews in water for 2 hours, then drain before using.
