Crunchy Baked Avocado Chips

Dare we say, healthy chips? Okay, it’s not a super salad, but these baked avocado beauties definitely tick more nutritional boxes than a plate of chips and they are a whole lot more decadent!

You will need:

  • 2 avocados, halved, and each half cut into 6 slices
  • ⅓ cup flour
  • ½ cup almond milk
  • 1 cup panko breadcrumbs
  • Pinch of salt
  • Pinch of chilli powder
  • 1 cup cashews
  • 3 cloves garlic
  • 1 ½ tablespoons lemon juice
  • ⅓ cup extra virgin olive oil
  • ½ teaspoon salt
  • ½ cup water

  • 1Preheat oven to 200°C.
  • 2Spread flour and breadcrumbs over two separate plates. Stir salt and chilli powder through the breadcrumbs. Pour the milk into a bowl.
  • 3Coat each avocado slice in flour, then dip in milk and finally, coat in breadcrumbs.
  • 4Place them on a greased tray and bake for 20 minutes or until golden brown.
  • 5Meanwhile, to make aioli, place all ingredients in a food processor and process until smooth.
  • 6Transfer avocado fries to a platter and serve with aioli on the side.

Tip: For a smoother aioli sauce, pre-soak the cashews in water for 2 hours, then drain before using.
