  • 1 tub coconut-based vanilla ice cream
  • 1 punnet raspberries, reserve a few for garnish
  • 1 packet Biscoff biscuits
  • 100g roasted peanuts blended to a crumble
  • A few strawberries to garnish

  1. Step 1

    Place the ice cream in a mixer together with the Biscoff biscuits and the raspberries. Mix quickly and vigorously until everything is combined.

  2. Step 2

    Scoop the ice cream into small bowls – it will be soft, but that’s the best part. Simply top with a few berries and anything else you like to add, and dig in.
