Fact: No apple or radish parts were wasted in the making of this dish. Leaves of radish and core of apple, you are all worthy! And it only takes a simple recipe to make them shine :)
You will need
Serves 2
- 5 radishes, whole with leaves on (small to medium in size)
- 100–200ml vegetable oil
- 1 lemon, halved
- 3 pinches salt
Apple Core Sauce
- 6 apple cores or 2 whole apples
- 100ml balsamic vinegar
- 100g sugar
- Water, to cover

Directions

Step 1
Start by putting the apple cores, vinegar, sugar and enough water to cover the apples in a pot.

Bring to the boil then simmer for 30–40 minutes or until soft and the liquid has reduced slightly.

Put into a blender and blend until smooth.

Pass through a sieve and leave to cool.

For the blistered radish, simply pour enough oil to cover the base of a large shallow frying pan and place it on high until the oil is very hot.

Place one radish at a time, carefully into the pan to achieve a shallow fry and blister on the radish.

Once the leaves are crispy, squeeze the lemon juice straight into the pan and add a few pinches of salt.

Once cooked, pick up each radish individually and place it onto a paper towel to drain the oil.

To finish, plate radishes with the apple sauce as a dip.
