You will need:

  • 5 radishes, whole with leaves on (small to medium in size)
  • 100–200ml vegetable oil
  • 1 lemon, halved
  • 3 pinches salt
Apple Core Sauce
  • 6 apple cores or 2 whole apples
  • 100ml balsamic vinegar
  • 100g sugar
  • Water, to cover
Recipe: Blayne Bertoncello

  • 1Start by putting the apple cores, vinegar, sugar and enough water to cover the apples in a pot.
  • 2Bring to the boil then simmer for 30–40 minutes or until soft and the liquid has reduced slightly.
  • 3Put into a blender and blend until smooth.
  • 4Pass through a sieve and leave to cool.
  • 5For the blistered radish, simply pour enough oil to cover the base of a large shallow frying pan and place it on high until the oil is very hot.
  • 6Place one radish at a time, carefully into the pan to achieve a shallow fry and blister on the radish.
  • 7Once the leaves are crispy, squeeze the lemon juice straight into the pan and add a few pinches of salt.
  • 8Once cooked, pick up each radish individually and place it onto a paper towel to drain the oil.
  • 9To finish, plate radishes with the apple sauce as a dip.
