Braised Mushroom Roll with Smoked Mayo & Pickles

Sometimes you just need to take note of really well-made product. Fable Food Co. have turned shiitake mushrooms into a meaty range of plant-based products that deserve to be front and centre in a burger.

You will need:

  • 1 classic white roll
  • 20g melted butter
  • 75g Fable Food Co. mushrooms, chopped
  • 50ml mushroom stock
  • 50ml vegan smoked mayo
  • 5 pickle slices
  • 2g fresh dill

  • 1Cut the bread down the middle but not all the way to the end, butter and toast on the grill.
  • 2Add the Fable mushrooms to a hot frypan and squirt in 30ml mushroom stock to help moisten them and keep them from sticking to the pan; lay a lid on top and cook for 30 seconds.
  • 3Take the bread off the grill. Spoon the mushroom mixture onto the bun, along with any leftover stock.
  • 4Add a squeeze of the vegan smoked mayo and top with the pickles and fresh dill.
