Zucchini has never tasted so good! Grilled to golden perfection and topped with a luscious roasted garlic dressing, this dish is the ultimate combination of savoury and bright, great for any occasion, but ideal for your summer BBQ.

You will need

Serves 4

  • 1 bulb garlic
  • 2 zucchinis sliced, cut 1/2 cm thick lengthways
  • 40ml extra virgin olive oil
  • 2 tablespoons capers
  • 20ml white wine vinegar
  • Handful parsley, finely chopped
  • Salt and pepper

  1. Step 1

    Wrap the bulb of garlic in tin foil and bake in the oven at 180°C for 30 minutes.

  2. Step 2

    Add olive oil to a frying pan and add your zucchini slices; grill on high heat until golden.

  3. Step 3

    Take the garlic out of the oven, let it cool until you can touch it, then squeeze the garlic into a small bowl. Chop up the capers and add them to the bowl too, along with the vinegar, parsley, salt and pepper. Mash with the back of a fork and mix until combined.

  4. Step 4

    Once the zucchinis are grilled, lay them down on a plate and spoon over the dressing and serve.
