Apple sauce is one of those things you simply buy in a jar from the shops — until the first time you make it at home, and realise how effortless it is! Not to mention, tastier than anything at a supermarket.
You will need
Makes 1
- 3 apples, 2 grated and 1 chopped roughly (russet apples if possible)
- 1 cinnamon stick
- 1 star anise
- 100ml water
- 50g sugar
- Pinch salt
- 1/2 grapefruit, zest and juice
To serve:
- 1 cup granola (nut-free and gluten-free if needed)
- 2 tablespoons coconut yoghurt
- Splash of oat milk (or plant-based milk of your choice)
- 1 apple, thinly sliced
Recipe: Simon Toohey
Directions
-
Step 1
Place all the apple sauce ingredients in a pan on medium heat for 5–10 minutes until apples are softly broken down.
-
Step 2
Add the zest and juice of the grapefruit to the apple puree, stir to mix through, and remove from heat.
-
Step 3
Place the granola, yoghurt and milk in a bowl and top with a big scoop of warm applesauce. Finish with some freshly sliced apple. Place extra apple sauce in a jar sterilised jar and store in the fridge for when needed.
