Swanky mashed potatoes like these make a lovely side dish beside a cauliflower steak or a BBQ veggie platter — of course, they can be equally enjoyed on the couch with a spoon ;)
You will need
Serves 6
- 450g Kipfler potatoes
- Salt & pepper
- 1/4 cup extra virgin olive oil
Herby Green Sauce
- 1 bunch chives
- 1 bunch basil, leaves picked
- Salt & pepper
- 2–3 tablespoons extra virgin olive oil
- 1/2 lemon, juice

Directions

Step 1
Boil the potatoes with their skins on until tender, then place in cold water — this helps make the skin easy to peel.

Step 2
Remove the skins from the potatoes while they’re still warm. Mash the peeled potatoes to the texture of your liking. Add a generous pinch of salt and olive oil, stir through.

Step 3
Pulse the basil and chives with a pinch of salt and pepper. Pour into a bowl and top with extra virgin olive oil and lemon juice. Stir through to combine.

Step 4
Spoon the green dressing over the mashed potatoes to serve.
