Swanky mashed potatoes like these make a lovely side dish beside a cauliflower steak or a BBQ veggie platter — of course, they can be equally enjoyed on the couch with a spoon 😉
1Boil the potatoes with their skins on until tender, then place in cold water — this helps make the skin easy to peel.
2Remove the skins from the potatoes while they're still warm. Mash the peeled potatoes to the texture of your liking. Add a generous pinch of salt and olive oil, stir through.
3Pulse the basil and chives with a pinch of salt and pepper. Pour into a bowl and top with extra virgin olive oil and lemon juice. Stir through to combine.
4Spoon the green dressing over the mashed potatoes to serve.
