
Portuguese Tomato & Salted Onion Salad Recipe
Lettuce introduce you to your new favourite side dish – this salty, tangy Portuguese tomato salad (hold the lettuce). With juicy beef tomatoes, salted onion slivers, and a slick of extra virgin olive oil, it’s bold, simple, and big on flavour.
You will need
Serves 2
- 2 beef heart or beef steak tomatoes
- 1 salad onion (white onion)
- 1 tsp salt
- Splash white wine vinegar
- 30ml extra virgin olive oil
- Salt and pepper, to taste

Step 1
Chop the onion in half, peel off the outer skin, and finely slice. Place in a bowl, sprinkle with salt, and massage gently until the onion is coated. Let it sit for 20 minutes to soften and mellow.

Chop the tomatoes into bite-sized chunks and add to a bowl. Pour in the vinegar and olive oil, then season with salt and pepper.

Add the salted onions to the tomatoes, toss well to combine, and transfer to a serving plate. Best enjoyed fresh alongside grilled dishes, crusty bread or on its own with a chilled glass of vinho verde.
