Did you know a handful of nuts a day can increase your lifespan and lower your risk of many cancers? If you want to be a nut-lover but haven’t found them too enticing in the past, try them like this and you’ll be a convert!
You will need
Serves 2
- 1 teaspoon brown sugar
- 1 teaspoon chilli flakes
- 2 tablespoons nutritional yeast flakes
- 50 grams almonds, blanched
- 25 grams pumpkin seeds
- 50 grams macadamia nuts
- 3 tablespoons tamari
- 1 iceberg lettuce
- 1 lemon, juice only
- 3 tablespoons extra virgin olive oil
- Salt and pepper

Directions

Step 1
Preheat the oven to 160°C.

Step 2
In a bowl, add in the seeds and nuts along with sugar, chilli, nutritional yeast flakes and tamari, and mix well.

On a lined baking tray, pour out the mixture and roast in the oven for 20 minutes.

Cutting the stem from the iceberg lettuce, remove the leaves and place them in a nest in your serving bowl.

Squeeze the juice of the lemon over the lettuce, along with olive oil, salt and pepper.

Break apart the spiced nut mixture which may have set in a slab in the oven, and sprinkle over your lettuce bowl to serve — you may choose to intentionally fill each lettuce leaf with nuts to create little lettuce ‘cups’ of nut mixture which can be eaten like tacos!
