You can thank the Greeks for inventing the spanakopita that inspired this dish, and thank Jack Rock (‘That Vegan Dad’) for giving us the easy-peasy plant-based version of it!
You will need
Makes 10
- 250 grams frozen spinach, thawed and well drained
- 1 garlic clove
- 1 cup rolled oats
- 225 grams vegan feta
- 1 teaspoon salt
- 1 puff pastry sheet, thawed
- Soy milk, for brushing (or plant-milk of choice)
- 1 tablespoon sesame seeds

Directions

Step 1
Preheat oven to 200°C.

Step 2
Blend spinach, garlic, oats, feta and salt in a food processor until smooth.

With a thawed sheet of puff pastry, cut in half and spread the mixture down the middle to fill. Pull the pastry together to make a roll and seal.

Step 4
Cut into party-sized pieces and transfer to a tray, brushing with milk to allow the pastry to golden. Top with sesame seeds.

Bake in the oven for 20–30 minutes or until golden brown.

Step 6
Serve with a side of tomato sauce (optional).
