You can thank the Greeks for inventing the spanakopita that inspired this dish, and thank Jack Rock (‘That Vegan Dad’) for giving us the easy-peasy plant-based version of it!

You will need

Makes 10

  • 250 grams frozen spinach, thawed and well drained⁠
  • 1 garlic clove⁠
  • 1 cup rolled oats⁠
  • 225 grams vegan feta
  • 1 teaspoon salt⁠
  • 1 puff pastry sheet, thawed
  • Soy milk⁠, for brushing (or plant-milk of choice)
  • 1 tablespoon sesame seeds⁠

  1. Step 1

    Preheat oven to 200°C.

  2. Step 2

    Blend spinach, garlic, oats, feta and salt in a food processor until smooth⁠.

  3. Step 3

    With a thawed sheet of puff pastry, cut in half and spread the mixture down the middle to fill. Pull the pastry together to make a roll and seal.

  4. Step 4

    Cut into party-sized pieces and transfer to a tray, brushing with milk to allow the pastry to golden. Top with sesame seeds⁠.

  5. Step 5

    Bake in the oven for 20–30 minutes or until golden brown.

  6. Step 6

    Serve with a side of tomato sauce (optional).
