There’s no better way to enjoy the beloved avocado than in the style of its native land and biggest producer, Mexico! Add this guac to any Mexican-inspired dish, or scoop with tortilla chips. Or a spoon.

You will need

Serves 4

  • 2 large ripe avocados
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • Juice from 1 lime
  • 1/4 large onion, very finely chopped
  • 1/4 cup coriander leaves, finely chopped
  • 2 teaspoons jalapeño pickling juice, from a jar of jalapeños (optional)
  • 3-5 pickled jalapeño chillies, finely chopped, to garnish (optional)

  1. Step 1

    Cut the avocados in half, remove the stones and scoop the flesh into a bowl. Add all remaining ingredients except chopped jalapeños, and mash together, leaving some larger pieces of avocado if you prefer a chunkier guac.

    Alternatively, scoop the avocado into a food processor and add the garlic, salt, lime juice, and jalapeño pickling juice, if using. Pulse if you like your guac chunky, or blend if you like it smooth, adding the onion and coriander at the end and pulsing just enough to mix it in.

  3. Step 3

    Garnish with the jalapeño chillies, if desired. Serve immediately.

Variation

Finely dice 1/2 a red capsicum and mix that into your guac for another refreshing hit of flavour and colour!

Hot tip!

Guacamole is one of those things you can’t really screw up, as long as you’ve got the basic foundation: avocados and salt. Adapt this recipe however you like according to your taste.
