What’s not to love about grated potatoes combined with fresh herbs, onion powder, flour, and some little pops of lime-hued brightness, courtesy of peas? A fool-proof brunch or snack-time recipe that will have you feeling like a real kitchen pro.

  • 500g-600g potatoes, peeled and coarsely grated
  • 1 cup frozen peas, defrosted
  • 1/4-1/2 cup flour, or gluten-free flour if needed (start with less and add more, if needed)
  • 1/4 cup finely chopped dill (and/or mint leaves)
  • 2 tablespoons finely chopped chives
  • 2 teaspoons baking powder
  • 2 teaspoon onion flakes
  • Salt and pepper, to taste
  • Olive oil, to cook

  1. Step 1

    Using a clean tea towel or very sturdy paper towels, squeeze out most of the liquid from the potatoes. They don’t have to be extremely dry, but we want to remove any excess moisture.

  2. Step 2

    Add all ingredients to a large mixing bowl and mix very well. Add more flour if the mixture is very sticky.

  3. Step 3

    Using clean damp hands, shape the mixture into fritter shapes.

  4. Step 4

    Heat the oil in a large fry pan over medium-high heat. Place 3-4 fritters on the pan and fry it on each side for about 3-5 minutes or until golden. Repeat for the remaining fritters.

  5. Step 5

    Serve the fritters as is, in a salad or in a burger with some tzatziki dip or as desired.
