All hail the potent red pigment of beetroot, with the power to turn any dish into a vibrant display of art! They do indeed lend these bliss balls a subtle earthy undertone, and you must believe us when we say, it works.
You will need
Serves 12
- 1/2 cup almonds (swap for sunflower seeds if nut-free)
- 1/4 cup cacao powder
- 1 tablespoon chia seeds
- 2 tablespoons beetroot powder
- 1/4 cup hemp seeds
- 1 teaspoon vanilla extract
- 1 cup soft, packed dates, pitted (approx. 10–12)

Directions

Step 1
Add almonds, cacao powder, chia seeds, beetroot powder and hemp seeds to a food processor and blitz for 1 minute or until very finely chopped.

While the food processor is still running add in the vanilla and one date at a time, then continue to process for a further 30 seconds. Turn off the food processor.

Step 3
Roll into balls around 2 tablespoons each in size. You may wish to coat them in extra cacao powder, beet powder, coconut or any seed of choice.

Store in an airtight container in the pantry for 2 days, in the fridge up to 5 days or you can freeze for up to 3 months.
