
These sweet, melt-in-your-mouth cookies are as fun to make as they are to eat! Whether you’re crafting pastel bunnies, bright Easter eggs, or classic stars and hearts, this easy sugar cookie recipe is all about creativity — and a little bit of sugar-fuelled magic.

For the cookies:
- 125g vegan butter, room temperature
- 3/4 cup (100g) icing sugar
- 1 teaspoon vanilla extract
- 1 3/4 - 2 cups (220g-250g) plain flour
- 1/4 teaspoon salt
For the icing:
- 1 cup (100g) icing sugar
- 2-3 teaspoons aquafaba or dairy-free milk
- Food colours, as desired

Step 1
Preheat your oven to 180°C (conventional) or 160°C (fan). Line 1-2 baking trays with baking paper.

Add the butter to a large bowl and cream with a hand mixer until pale and light. Add the sugar and vanilla and beat until fluffy.

Add the flour and salt and beat until well combined. The dough should be soft but not tacky. If it’s too soft, mix in a little more flour. If it’s too dry, mix in a dash of milk.

On a lightly floured surface, roll out the dough so it is about 5mm thick. Use cookie cutters to cut the dough into shapes. Carefully place each cookie on a lined baking tray leaving 2cm between each. Collect the excess dough and repeat.

Bake the cookies for around 10 minutes or until they’re very lightly golden brown. The time will depend on the size and shape of your cookies. Let them cool on the baking trays for 10 minutes then transfer to a wire rack to cool completely.

To make the icing, add the sugar and aquafaba to a bowl and mix until combined. Add more sugar for a thicker icing (great for outlining) or add more liquid for a runnier icing (great for filling in the outline). To colour the icing, divide into separate bowls and mix with 1-2 drops of food colour.

Decorate the cookies and allow to set at room temperature for a few hours before serving.
