Vegan bacon but make it ‘Canadian bacon’ style. These thick, savoury slices are best served with a plate full of your brekky favourites — think roasted tomatoes, baked beans, tofu scramble, smashed avo… Maybe some hash browns and vegan sausage too!

  • 2 x king oyster mushrooms

Marinade

  • 3 tablespoons nutritional yeast
  • 2 tablespoons dark or mushroom soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • A few drops of vegan-friendly red food colouring, for optional drama

  1. Step 1

    Slice off the cap and end of the mushroom, then run a vegetable peeler or sharp knife down the mushroom stalk to make six strips.

  2. Step 2

    Mix to combine all the ingredients for the marinade, then add the strips and marinate for 1 hour.

  3. Step 3

    Bake at 160°C for 40 minutes or deep-fry for 5-7 minutes in hot canola oil.
